Gourmet Goat Cheese and Chuck Roast Dinner

Ingredients:

  • 200g Goat cheese
  • 50ml Grapeseed oil
  • 50ml Olive oil
  • 1 Lemon (juiced)
  • 1 Avocado (sliced)
  • 100g Tomato paste
  • 200g Rice
  • 4 slices Rustic bread
  • 4 Flour tortillas
  • 1 tsp Seasoning salt
  • 1 tsp Black pepper
  • 200g Cherry tomatoes (halved)
  • 4 Eggs
  • 100g Mayonnaise
  • 200g Cabbage (shredded)
  • 150g Grapes (halved)
  • 50g Pistachio (chopped)
  • 2 tbsp Honey
  • 200g All Purpose Flour
  • 500g Chuck roast

Kitchen Tools Needed:

  • Oven
  • Air Fryer
  • Stove Top
  • Slow Cooker

Instructions:

  • Preheat the oven to 180°C (350°F).
  • Season the chuck roast with salt and black pepper, then sear it in a hot skillet with olive oil until browned on all sides.
  • Transfer the chuck roast to a slow cooker, add tomato paste, lemon juice, and half of the grapes. Cook on low for 6 hours or until tender.
  • Meanwhile, cook the rice according to package instructions and set aside.
  • In a bowl, mix mayonnaise with lemon juice, salt, and pepper to create a dressing.
  • In a separate bowl, combine shredded cabbage, halved cherry tomatoes, and sliced avocado. Drizzle with the mayonnaise dressing and toss to combine.
  • Prepare the rustic bread by brushing with grapeseed oil and toasting in the air fryer until golden brown.
  • In a skillet, scramble the eggs and season with salt and pepper.
  • Once the chuck roast is done, shred it and serve it on flour tortillas topped with the cabbage salad, scrambled eggs, and chopped pistachios.
  • Serve the rice on the side, drizzled with honey and garnished with remaining grapes.
