Ingredients:
- 200g Goat cheese
- 50ml Grapeseed oil
- 50ml Olive oil
- 1 Lemon (juiced)
- 1 Avocado (sliced)
- 100g Tomato paste
- 200g Rice
- 4 slices Rustic bread
- 4 Flour tortillas
- 1 tsp Seasoning salt
- 1 tsp Black pepper
- 200g Cherry tomatoes (halved)
- 4 Eggs
- 100g Mayonnaise
- 200g Cabbage (shredded)
- 150g Grapes (halved)
- 50g Pistachio (chopped)
- 2 tbsp Honey
- 200g All Purpose Flour
- 500g Chuck roast

Instructions:
- Preheat the oven to 180°C (350°F).
- Season the chuck roast with salt and black pepper, then sear it in a hot skillet with olive oil until browned on all sides.
- Transfer the chuck roast to a slow cooker, add tomato paste, lemon juice, and half of the grapes. Cook on low for 6 hours or until tender.
- Meanwhile, cook the rice according to package instructions and set aside.
- In a bowl, mix mayonnaise with lemon juice, salt, and pepper to create a dressing.
- In a separate bowl, combine shredded cabbage, halved cherry tomatoes, and sliced avocado. Drizzle with the mayonnaise dressing and toss to combine.
- Prepare the rustic bread by brushing with grapeseed oil and toasting in the air fryer until golden brown.
- In a skillet, scramble the eggs and season with salt and pepper.
- Once the chuck roast is done, shred it and serve it on flour tortillas topped with the cabbage salad, scrambled eggs, and chopped pistachios.
- Serve the rice on the side, drizzled with honey and garnished with remaining grapes.
