Vegetable Rice Bowl

Ingredients:

  • 1 cup Basmati Rice
  • 1 medium Onion, chopped
  • 1 cup Green Peas
  • 2 Green Chillies, chopped
  • 3 cloves Garlic, minced
  • 1 medium Cucumber, diced
  • 1 cup Corn, boiled
  • 1 medium Carrot, diced
  • 1 medium Capsicum, diced
  • 2 tbsp Vegetable Oil
  • 2 tbsp Soya Sauce
  • 1 tbsp Vinegar
  • 1/2 cup Tomato Puree
  • 1/2 cup Cottage Cheese, crumbled
  • 1 tbsp Mustard Oil
  • 1 tbsp Honey
  • 1/4 cup Raisins
  • 1/4 cup Dates, chopped
  • 1/4 cup Melon Seeds
  • 1/4 cup Pistachio, chopped
  • 1/4 cup Chia Seeds
  • 1/4 cup Puffed Rice
  • 1/4 cup Vermicelli, toasted
  • 1/4 cup Gram flour
  • 1/4 cup Flour
  • 1/4 cup Cornflour
  • 1/4 cup Breadcrumbs
  • 1/4 cup Semolina
  • 1 Egg, beaten
  • 1/4 cup Butter
  • 1/4 cup Olive Oil
  • 1/4 cup Mustard Seeds
  • 1/4 cup Poppy Seeds
  • 1/4 cup Sesame Seeds
  • 1/4 cup Coffee, brewed
  • 1/4 cup Chocolate, melted
  • 1 tsp Vanilla Essence
  • 1 Lemon, juiced
  • Salt to taste

Kitchen Tools Needed:

  • Blender
  • Stove Top
  • Pressure Cooker

Instructions:

  • Rinse the Basmati rice and soak it for 10 minutes. Drain and set aside.
  • In a pressure cooker, heat 2 tbsp of Vegetable Oil and add chopped Onion, Green Chillies, and minced Garlic. Sauté until the onions are translucent.
  • Add the soaked rice and stir for a minute. Then add 2 cups of water, Soya Sauce, Vinegar, and Tomato Puree. Season with salt and cook for 2 whistles.
  • Once done, let the pressure release naturally. Fluff the rice with a fork and set aside.
  • In a pan, heat 1 tbsp of Mustard Oil and add diced Carrot, Capsicum, and boiled Corn. Sauté for 3-4 minutes until slightly tender.
  • Add Green Peas, Raisins, Dates, and Melon Seeds to the pan. Mix well and cook for another 2 minutes.
  • In a bowl, combine the crumbled Cottage Cheese, beaten Egg, Honey, and Lemon juice. Mix well.
  • In a separate bowl, combine Gram flour, Flour, Cornflour, Breadcrumbs, Semolina, and spices (Mustard Seeds, Poppy Seeds, Sesame Seeds).
  • Form small fritters with the cheese mixture and coat them in the flour mixture. Fry in 1/4 cup of Butter until golden brown.
  • Serve the rice topped with sautéed vegetables and fritters. Drizzle with melted Chocolate and brewed Coffee for a unique flavor.
