Ingredients:
- 200g of red lentils
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 small piece of ginger, grated
- 2 green chilies, slit
- 1 teaspoon of turmeric powder
- 1 teaspoon of cumin seeds
- 400ml of coconut milk
- Salt to taste
- Coriander leaves for garnishing

Instructions:
- Rinse the red lentils under cold water and drain.
- In a pot, sauté the chopped onion, garlic, ginger, and green chilies until the onions are translucent.
- Add the cumin seeds and turmeric powder, and sauté for another minute until fragrant.
- Stir in the rinsed lentils and mix well with the sautéed ingredients.
- Pour in the coconut milk and bring to a boil. Reduce heat and let it simmer for about 15 minutes, stirring occasionally, until the lentils are cooked and soft.
- Season with salt to taste and cook for another 2-3 minutes.
- Serve hot, garnished with chopped coriander leaves.
